Serves 4
Ingredients
4 six to eight oz. portions Alaskan Halibut or Rockfish fillets
3 tablespoons lime juice
3 cloves garlic
½ cup cilantro
2 tablespoons butter
1 tablespoon olive oil
Salt and pepper to taste
Brush the fish with 1 ½ tablespoons of the lime juice, sprinkle with salt and pepper and set aside.
Melt the butter with the oil in a small saucepan over low heat. Add garlic and saute about 3 minutes. Add the cilantro and remaining lime juice. Stir thoroughly, cover, and remove from heat.
Place fish on a pre-heated grill over a medium high fire or under a broiler. Grill or broil until just opaque in the center and flaky, about 10-15 minutes depending on the thickness of your fillet.
About 3 minutes before your fish is done, baste with the cilantro lime sauce and finish cooking.
Pour the remaining sauce over fillets upon serving.
